•Cutting an onion ruptures cells, releasing alliinase enzymes that react with amino acid sulfoxides.
•This reaction produces 'syn-propanethial-S-oxide' gas, which is highly volatile and spreads rapidly.
•When the gas contacts eye moisture, it forms a mild sulfuric acid, causing irritation and a burning sensation.
•Tears are released by lachrymal glands as a defense mechanism to wash away the irritating acid.
